Winged Bean!

Winged Bean (ചതുരപയർ)



The most nutritious of vegetables, this little-grown bean is a storehouse of vegetable protein which exceeds even that of meat protein. Known as star bean, Goa bean, four-cornered bean, Manila bean and Mauritius bean, Psophocarpus tetragonolobus is a perennial vine which grows easily in many soils and climes. It can be grown organically and gives a high yield because of its nitrogen fixing ability.


This delicious bean contains not just protein, but carbohydrates, fats, vitamins, iron and minerals. The leaves can be cooked like spinach, the beautiful blue flowers can be used in salads, and the tubers can be eaten raw or cooked. The seeds too are edible like soybeans. Tender beans can be chopped to make a delicious stir-fry (തോരൻ) with grated coconuts.
